It is SUPER simple and a new-found love in our home.<div>We all just know it as “White Sauce.” It is great in place of any creamy dressing, sour cream, or dip for veggies. It can pretty much go on anything dinner-ish.</div><div>
My kids use it on their tacos, pasta and broccoli, lentils, or potatoes for lunch. We eat it in ALL kinds of tacos for dinner, to calm down spicy soup, or just anytime we need a carrot or veggie dip. I cannot believe how easy and cheap it is to make.<br />
I use to make a raw cashew dip all the time, which is still so yummy and a bit creamier than this, but a lot more expensive, and when trying to feed more people this works wonders! <br />
<br />
Add all the following ingredients to the blender:<br />
<br /><b>
1 Bag of Raw Sunflower Seeds</b>, 12 oz bag or about 2 C, soaked in water at least 10 minutes, then drained.<br />This gives them a quick soak/sprout. You can do longer, like a few hours or overnight if you want them totally sprouted.</div><div><b>3 Small Limes</b>, juiced (Roll them out on the counter first to get the most juice)</div><div><b>
1 Tbsp. Sea Salt</b>, add more later if needed</div><div><b>Water</b> up to the 4C line when seeds are in the blender.<br /><br /></div><div>Blend on sauces or high for 2-3 cycles or until your desired texture of creaminess is achieved.<br />

*This recipe make a big batch, like 4 C or more when finished. It stores in the fridge 4-5 days...if it lasts that long! :)<br />

Today's salad for lunch included fresh and creamy Ataulfo Mangoes. Right now I can get Ataulfo Magoes for pretty cheap at H-E-B so we're buying lots! My kids could eat them all in one day if I let them, they are so sweet!<br />
Making up new salads is fun and we are constantly adding new foods together in this house.<br />

We happened to run out of dressing today too, hey it happens with 8 eaters, however this salad is actually sweet enough that it does not actually "need" a dressing, but I went ahead and put a few sweet and sour flavors together for those who have to have the dressing, and now we have a new dressing that goes nicely on any light and fruity salad, yum!</div>

<u>Honey-Lime Chia Dressing </u><br />
1/3 C Honey<br />
2 Small Limes, squeezed (about 1/4 C)<br />
1/4 C Olive Oil<br />
1 T Chia seeds<br />
I put all the ingredients in a honey container and shook it up.<br />
*It is best after the Chia seeds have sprouted a little- at least 15 minutes.<br />

It is light, sweet and salty and is almost like a "dessert" salad. The mixture of flavors with all the toppings almost taste like a raw cheesecake, yum!<br />

I have decided after 7 years of only posting raw recipes, to include other plant-based recipes that our family has come to love. I hope they will inspire you on your own health journey!<br />
<br />
A quick update on my health. By avoiding all the nightshades and many other foods on my weak allergy foods list, all except for wheat and tomatoes are cleared now. Our bodies are amazing! I have also started taking a probiotic and magnesium/calcium to boost my immunity and hopefully help with my gut healing.<br />

It is a complete protein and my very favorite grain because of it's light, fluffy and slightly nutty flavor. It goes well sprinkled over salads or as a main dish with veggies! I always make a big pot of it and serve half for dinner and save half for the next day!</span></div>

<span style="font-family: "times new roman";">1. To cook Quinoa rinse your desired amount once in a strainer with very small holes because the grains are so small and you do not want to lose them! </span></div>

I have loved a good guacamole for years, but I almost always added chunks of tomato and red bell peppers. This new version is great and I even added more dark leafy greens in it for texture and benefits. I hope you enjoy it as much as I did!<br />

I made organic brown rice and black beans for my family to put on our taco
salad, I tried making "cauliflower rice" for the first time, which is
just cauliflower in the food processor until it resembles a small rice.

I wanted to post about it so I could remember and maybe it will help others too. The first time I went grocery shopping it was kind of hard to not buy our foods we have bought for years and even based meals around, like tomatoes, potatoes and peppers among other normal foods for us, like broccoli. Instead I bought a lot more cabbage, cauliflower, kale, and sweet potatoes. It was actually not too bad of a transition and I did come up with a lot of new recipes...I will try to post some things we tried.<br />

So some good things that have been happening health wise are that we introduced a lot of new veggies. For two weeks I ate all raw and no night-shades. My savers were<u> Sunfoods</u> coconut wraps to wrap in carrots, avocados, spinach or romaine and zucchini with sprouted beat hummus. I felt pretty good, fit and healthier, even though my knees and wrists didn't change. My stomach felt better (it's been one month without any acid/burning in my stomach-yay) and my MIND felt better, I wish I could remind myself how great I feel in those moments. Then I had dates, raw brownies, and decided to try sweet potatoes. They were great, but then the "all fresh" feeling left, and I decided to eat cooked-vegan, but no nightshades or grains except for some quinoa. Unfortunately we then found an amazing almond-flour blueberry muffin recipe and an almond-flour almond butter brownies. I say "unfortunately" because while we replaced wheat flour with almond flour, we still added all the pure maple syrup and then the sweet/salty cycles begins again, wanting more- never feeling "satisfied" like when I eat all raw, low fat and not extra sweeteners.<br />

However, life is a journey and this month I have learned SOOO much! I now know about Paleo...even I was almost convinced that I needed fish again...and I never liked fish I the first place! I can see how it may work for people going from SAD to Paleo, but not for me. I've been email bombarded with Dr. Axe's "bone broth benefits." While I like a lot of his "fruit and veggie for this or that" lists, I am not about to add a powdered meat product to my diet..nope not for me. I looked at the Gaps diet- I liked the idea of adding in fermented foods and probiotics... even though I don't really like the taste of vinegar, sauerkraut isn't so bad mixed in a salad. I looked at Candida and while I do think my family eats more natural sugar than anything else, I do not think I have that, but at least learning about it motivated me not to buy raisins, dates, pure maple syrup and agave for a while. Actually I think we may be done with agave for good... Still debating with all the controversy going on about it, it seems like since 7 years ago when I was first buying it that it has gotten thinner...is it really agave?<br />
Anyways, I had no idea that there were so many variations of what people eat. I guess when you choose a lifestyle and go with it for so long you don't really have a reason to go searching again, unless a problem arises or unless you are a fad dieter...which I've never been. </div>

So after a month of no nightshades I did some muscles testing and found that tomatoes, peppers, and potatoes were all strong. Goji berries, cayenne, chili powder and eggplants are still weak. But I have just been thinking how amazing is is that just by avoiding these foods my body could create a tolerance to them again! Our bodies are truly a gift from God.<br />
Well, yesterday I decided to try a tomato on my almond-flour tortilla with avocado, lightly cooked spinach and zucchini with salt and pepper. I have to say that even reaching for the perfectly ripe tomato I didn't WANT to eat it, but I tried it anyways and I ended up scraping it off. It just tasted weird and actually kind of gross and sour. My conclusion is that maybe my body is not necessarily intolerant to tomatoes now, but maybe I do not really NEED tomatoes in my diet. What did I really eat them with before? Salsa.. and since I have not had corn either, we cut out our blue organic corn chips, it was probably for the better. Soup...with LOTS of chili powder! I may keep a few around for my hubby, but we'll see since I do most of the food fixin'. :)<br />
Oooh, but let me say that without chili powder I have come to like a few new spices. I like black pepper and cumin together, and the Gram Masala that I get in our bulk section does not have any nightshades in it and adds a yummy balance of sweet almost cinnamony and curry-ish flavor (nope, my old love of curry is still on my no-list.) It will be interesting to see if other food sensitivities clear up.<br />
I want to end with this. With all the learning, my brain has become overwhelmed! Reading and reading and thinking things like, "less cashews, more greens, less dates, berries are low sugar..." and "If I eat this, what will I feed my 6 children and husband?!" or "This food is now "good" but that one causes mold in the body"-which by-the-way is what I think is making my wrists and knees flare up, and we had our vents cleaned, but now I think it is already IN me, so that is one more reason to kill the bad in my gut and put in the good, okay another tangent, I know!<br />
While feeling overwhelmed with reading, and trying to decipher what are truly "the best books" or "sites" these days, I finally sat down to read my scriptures today and while reading had the thought, "Do what you already know works for you, start there..." I'm thinking, Like raw? Some cooked veggies, not much added sweeteners and add in these new fermented and probiotics and probiotic-rich foods? Could it really be that simple? I then turned to a random page, which I do occasionally just to see if I can be inspired and in The Book of Mormon in Alma chapter 20:4. I had this underlined, <b>"I know, in the strength of the Lord, thou canst do all things." </b>It brought me to tears and I had to say a quiet prayer of thanks right then. What I learned best of all is that no matter what trial, disease, limitation, stress, or burden you carry, the Lord cares about you and He can comfort you in and through it all and He will let you know in His way and His timing what He wants you to know, do and feel. Today I did not find "the perfect diet" for me, but I found comfort and peace. The rest is in the hands of the Lord.</div>

If you are one of the few who have ever followed my blog or stumbled upon it, you may have wondered why I haven't put anything new on here for....a like a year? Well, it is mostly that my family does not eat all raw anymore and I just could not bring myself to change the blog.<br />
<br />
I have had recipes I have wanted to post on here that our family has come
to love that are plant-based and cooked, but just never either took the
time or felt like they were really "healthy" all around. <br />
<br />
However, we have stayed completely plant-based for the last 7+ years. We have enjoyed much health balanced weight, get well quickly and have added more family members- we are now at 8!<br />
Since I believe in celebrating the good that happens in life, here is what we have done well.<br />
1. We have not eaten meat or dairy and very minimal white sugar or flour.<br />
2. We have eaten thousands of fresh fruit, veggies, green smoothies, nuts, seeds and whole grains.<br />
However, we have eaten a lot more baked goods with whole wheat flour, corn chips/tortillas, peanut butter, coconut palm sugar, and LOTS of tomatoes, peppers, and potatoes.<br />
<br />
That sounds pretty good right? I thought so too. Well, recently my knees started to hurt more and my wrists, though a
different area than years ago, started to swell slightly and be sore. I had also noticed that whenever we had spicy foods (that I love) and
taco soup or curry the upper part of my stomach felt a slight burning. I
have really bad heartburn when I am pregnant, and now not being
pregnant and still having a burning was really noticeable and uncomfortable.<br />
<br />
I love to run, so a big part of my problem may be that I am working out more now that we live in a warm climate during the winter, but part of me had to ponder on if I still had some sort of imbalance going on in my gut! <br />
So you start with what you know, right? What I know was that I had similar symptoms in the past and I have tried orthopedics in my shoes, so I got those out. I also know that the only times I feel free of any stomach issues is when eating completely raw, although I had noticed that when eating raw, my favorite tomato soup still made me feel funny.<br />
<br />
Here I am on another health adventure. Dealing with 2 issues, joints and stomach. Are they related? Maybe, maybe not. If they are great, if not, great. What I know is that we are given tests and trials in life to LEARN! I am not a afraid to learn, change, and learn again. I love it! Learning is a gift and so is this body that I have been given!<br />
<br />
I was just thinking this morning how we are motivated to change when we
are AWARE of a problem and the problem is interfering with comfort in
life. I also believe that once we know something, we are accountable
for that knowledge. <br />
<br />
So I went completely raw again, but this time I felt to do some self-allergy testing first. After testing I found results that I did not necessarily like, but did not find surprising. <br />
<br />
My list of intolerance or weakness in the allergy testing included:<br />
* Wheat, wheat flour, millet, yeast, corn, corn chips, corn tortillas, mold, cows milk, cheese, peanuts, peanut butter, white-sugar, AND Tomatoes, Brown Potatoes, Red Bell Peppers, Jalapenos, Chili Powder, Cayenne Pepper, Egg Plants, and Gogi Berries.<br />
<br />
WOW! What I realized was that when we went raw 8 years ago, it immediately eliminated some of the major known allergies, but ones that I never thought about having issues with, only knowing that when I ate a lot of bread I felt bloated. So at that time, it was probably one of the best things we did and has definately not hurt us! Slowly we added back in cooked vegetables and grains and we felt it was a good place to stay.<br />
<br />
I thought that my list was kind of odd when it got to those vegetables until I made the connection that they are all what are considered "Night-Shade" foods. I had heard many years ago that sometimes inflammation can be related to night-shades, but thought it odd because these are fruits and veggies we're talking about, not something that "hurts" us.<br />
<br />
Over the years of our health journey I have learned many things. Recipes, diets, fads, intolerance, allergies, I have been to classes and read books, read blogs, talked with many people about health- what is "good", what is "bad" but I know one thing for sure. No BODY is the same. What feels bad to my body, is fine on my husbands. While others people cannot eat nuts, my body feels great eating them.<br />
<br />
Talking to my husband the other day I decided that I love the <a href="https://www.lds.org/scriptures/dc-testament/dc/89?lang=eng#" target="_blank">Word of Wisdom given in Doctrine and Covenant 89</a>. It is a <b>definite </b>guideline! Here is what to avoid and here is what is better for you. After that, our bodies are all different from genetics to lifestyle choice and I believe we need to learn for ourselves what is best for us individually.<br />
<br />
So here I have new-found knowledge. I almost take it on as a challenge. A way to have a fresh start, literally. A way to find new recipes that feel good to me. It's time to add to the blog, find new recipes and share what I learn with others. A time to learn more about the body, zoning, allergies, and more. If one day I am free from those intolerances, great, but if not I will always go on faithful in the Lords plan for me and continue to learn what I can and share with others.<br />

I could not believe how fast it was to make and how fancy it looked. We simply devoured it with wheat crackers and veggies.<br />
<br />
Into the Blender went:<br />
1 1/2 C Cashews<br />
1/2 Lemon, or 2 T Lemon Juice<br />
1 tsp Sea Salt <br />
1 T Nutritional Yeast<br />
Dash of Cayenne Pepper<br />
<br />
Pulse Together until the dough forms a ball on top of the blade. It is not wet and you can just dump it out into a bowl and form it together with your hands.<br />
Add Shredded Almonds or other crushed nuts to the outside. It is ready to eat right away, or cover it and store in the fridge. The longer in the fridge the more it will dry out and become crumbly- which becomes and excellent salad topping :)<br />
*It is very versatile and I think I would add crushed Walnuts and Italian spices to the outside next time. <br />

While it is not raw, we still consider it a plant-based food and the kids love to eat cut up gala apples and peanut butter for breakfast and/or snack time.<br />
We like to buy the fresh ground peanut butter and can even tell the difference between it and Adams "natural" peanut butter. It's just fresher and not oily. I personally only like peanut butter on something such as Celery and peanut butter with raisins, or mixed with something chocolaty. If you want to keep this recipe raw you can omit the PB or go with raw almond butter, which is also great.<br />
<br />
Ingredients<br />
<b><br /></b>
<b>Brownie</b><br />
1 C Raw Almonds<br />
1 1/2 C Pecans<br />
1/2 C Walnuts (plus 1/2 set aside for the top)<br />
1/4 C Organic Cacao Powder<br />
1 C packed and pitted Medjool Dates, about 12-16.<br />
3 Tbsp Raw Honey (opt.)<br />
Dash of sea salt<br />
<br />
<b>Middle</b><br />
1 C fresh ground Peanut Butter<br />
<b><br /></b>
<b>Frosting</b><br />
1 C Coconut Oil<br />
1/2 C Agave<br />
1/2 C Pure Maple Syrup<br />
1/4 C Cacao Powder<br />
Dash of Sea Salt<br />
<br />
1. Add the nuts, cacao, and sea salt to a food processor with the S blade in place. Process until slightly crumbly.<br />
2. Add the dates and honey and process until the mixture starts to stick together.<br />
3. Transfer to a plastic wrap lined 9x13 glass dish and press down mixture with your knuckles until even.<br />
4. Spread the cup of peanut butter on the brownies. If it's too sticky add a little coconut oil to the back of a spoon and continue to spread until even.<br />
5. Make the frosting by adding coconut oil, agave, maple syrup, cacao, and salt to the blender.<br />
Blend on high until all the coconut oil is blended and there are no chunks left.<br />
6. Top the brownies with 1 C of the frosting. Save the remaining in an airtight container in the fridge.<br />
7. Sprinkle brownies with 1/2 C Walnuts.<br />
8. Freeze until ready to eat. -You can eat them soft, but they are better after an hour or so in the freezer.<br />
9. Take out of the freezer and pull up on your plastic "handles," setting it onto a cutting board.<br />
10. Cut into 1x1 inch squares, serve and enjoy :)<br />

The almonds and spinach add protein while the seeds aid in digestion and omega 3's. The cacao is a super food as well.<br />
This shake has been a new favorite for me since the sourness of normal berry smoothies do not sit well when I am nearing the end of another pregnancy and have SO much heartburn.<br />

<b>Red Pepper Dressing</b><br />
2 C Cashews, quick soaked in warm water 10-15 minutes<br />
1 Medium Red Pepper, cored<br />
3/4 T Sea Salt<br />
1 T Nutritional Yeast<br />
1 Lemon, Juiced<br />
1 1/2 C Water<br />
Blend on "dressing" or high until smooth and creamy.<br />
Transfer to dressing bottles and store in the fridge until ready to use. <br />

Fresh Romaine, chopped<br />

Grape Tomatoes, halved<br />

This raw/vegan arrangement is a fun way to spice up your dinner or makes a great appetizer for a dinner party.<br />
For years I have loved the taste of Avocado mashed with a little salt and pepper, as it resembles scrambled eggs. (Try it on whole grain toast if your vegan)<br />
Last night I thought it would be fun to add some spice.<br />
<br />
1.<b> </b>Take <b>3 perfectly ripe Avocados</b> and split them legnth wise,<br />
2. Take out the pit- using a chopping motion, aim the knife downward on the pit and hit the pit with the knife, when it sets in, pull out the pit with the knife. <br />
3. Cut them again width wise.<br />
4. Arrange them on plate and sprinkle with sea salt, fresh ground pepper and just a light sprinkle of paprika. <br />

The other day I saw a beautiful Cake in the Strawberry section at the grocery store, it had fluffy chocolate frosting and a strawberry jelly filling. While the sugary idle didn't tempt me a bit, the idea of a raw version came on strong! It turned out better than amazing and we even celebrated after dinner because it looked so beautiful, of course it was even better to eat. Our family is a definite fan of chocolate and strawberries. The chocolate is rich and perfectly complemented by the sweet and sour strawberries in the jelly. I hope you enjoy it as much as we did!<br />
<br />
I started with the Strawberry Jelly. Then it has time to set a bit before using it. This recipe made more than enough, and you can store the rest as a freezer jelly/jam or in the fridge for several days and use as a topping for raw ice-cream, or raw crepes.<br />
<br />
<b>For the Jelly</b><br />
<br />
1 lb Fresh Strawberries, washed, dried, cored and cut in half<br />
1/4 C Agave<br />
1 T Chia Seeds<br />

1 C Organic, non-refined Coconut Oil<br />
1/2 C Organic Pure Maple Syrup<br />
1/2 C Raw Organic Agave<br />
1/2 C Organic Cocoa Powder <br />
Dash of Sea Salt <br />
<br />
Add to the blender and blend one cycle on high, make sure there are no extra pieces of coconut oil in your frosting. Transfer to a bowl and set in the freezer so it can firm up.<br />
<br />
<b>Rich Chocolate Cake</b><br />
If you're not a fan of "rich" cake, you can add less cocoa, but as was said, it really complements the strawberries!<br />
<br />
1 1/2 C Pecans<br />
1 C Raw Almonds<br />
1 C Walnuts<b> </b> <br />
15 Soft Medjool Dates, pitted<br />
<br />
Blend nuts together until course crumbs are left.<br />
Add the dates and blend until the dates are well incorporates and the mixture starts to clump together. You may need to stop and push down the sides a few times.<br />
<br />
In another bowl add:<br />
1 C Unsweetened, Shredded Coconut<br />
1/8 tsp Sea Salt<br />
1 C Cocoa<br />
1/4 C Agave<br />
<br />
Mix together and add the nut/date mixture. Stir all of it. It is thick, so you may want to use your hands and mix it all together.<br />
<br />
<b>Finishing the Cake</b><br />
1. Double line a round 9 inch cake pan with plastic wrap.<br />
2. Add the cake mixture to the pan and press it down evenly.<br />
3. Let set in the freezer 5-10 minutes or until a bit firm.<br />
4. Take out Jelly, Frosting, and Cake.<br />
5. Stir the jelly.<br />
6. Whip up the frosting by stirring hard with a butter knife-it should be pretty firm when you go to use it.<br />
7. Turn the cake over onto a plate big enough to hold it.<br />
8. Frost the cake with the chocolate frosting, be sure to get those sides!<br />
9. Make a center for the jelly by adding a "wall" of frosting around the edges of the cake. I chose little drops of frosting.<br />
10. Fill the center with jelly, about 1 1/2 cups- but be careful not to overflow it.<br />
11. Top it with extra fresh Strawberries.<br />12. Cool in the freezer or fridge until ready to serve. I like it in the freezer so the jelly chills together.<br />

For a fun appetizer at a potluck or a great way to mix up what you have for dinner try these super delicious mini-stuffed peppers. They can be eaten fresh and raw, or for a more intense flavor and softer shell try dehydrating them. That's how I like them best. They are great on a salad or can stand alone. <br />
<br />
What you'll need: <br />
<br />
8-10 Mini Peppers, split in half with the seeds scooped out.<br />
Any color work, I like red best, but they usually come in a package with a variety of colors. <br />
<br />
<b><u>Cashew Pâté </u></b><br />
2 C Cashews, soaked an hour or more (or quick soaked in warm water for 10 min., enough to make them softer)<br />
1 1/2 C Water<br />
1 TBSP Sea Salt<br />
2 Med. Lemons, Juiced<br />
1 Med. Garlic, pressed <br />
<br />
Blend the cashews, water, sea salt, lemons, and garlic together on high. I like to blend it until creamy, but some like a more grainy texture. Add more water if you need to. This is a perfect "base" pâté as well and you can add many different flavors and textures to it, or use it plain as a spread or veggie dip.<br />
<br />
For <b>this stuffed pepper filling</b> scoop out two cups of pâté and in a big bowl add:<br />
3 large Carrots, grated<br />
3 long Stalks of Celery, minced<br />
3 medium Zuchinni, minced<br />
1/4 C Nama Shoyu (opt.) <br />
1/4 C minced White Onion<br />
1/8 C Finely Chopped Cilantro<br />
1 Garlic, Pressed (this is in addition to the above, so there are 2 total, unless you want to add more.)<br />
2 tsp. dried Oregano<br />
1/2 tsp. Cayenne Pepper<br />
<br />
Stir together well until all the vegetables are coated then scoop out spoonfuls into the peppers. Arrange on a plate if you want to serve them right away and chill in the refrigerator. Or place on a dehydrating sheet at 118 or lower for 3-4 hours. This works great if you make this around lunch time and want to enjoy them for dinner. I hope you like it and have a wonderful dinner!<br />
*They keep well if dehydrated in an airtight container for 1-2 days. <br />

Last week radishes, (not common at our house), sugar-snap peas and fresh ginger made it in the cart. I knew I wanted to make some kind of a fresh Chinese Salad. I have also been experimenting with salt-free dishes-it's harder than I expected, but I know it's better for us. Well, the salad turned out light, crunchy, and wonderful with a slightly spicy, yet sweet coating from the dressing.<br />
<br />
Chinese Cabbage Salad<br />
3 C Kale, washed, torn into bite-size pieces and massaged for a better flavor<br />
1/2 Head of Cabbage, I used red, either type works<br />
1/4 tsp Sea Salt <br />
1 C Sugar-Snap Peas<br />
1/2 Red Bell Pepper, chopped<br />
5 Radishes, sliced<br />
1/2 Carrots, shredded<br />
1 Avocado<br />
1/4 C Sesame Seeds <br />
<br />
Sweet Red Pepper and Ginger Dressing<br />
1/2 C Cold Pressed Ext. Virgin Olive Oil<br />
1 Red Bell Pepper<br />
1/4 in. Fresh Ginger, minced<br />
1 Med. Garlic Clove, pressed<br />
2 T Apple Cider Vinegar<br />
1/4 Raw Honey<br />
Blend together until smooth and there are no pepper chunks. It's okay if there are little pieces. <br />
<br />
In a big salad bowl toss together Kale, Salt, and Cabbage with your hands. Add peas, peppers, radishes, and carrots.<br />
Add 1 C of dressing to the salad.<br />
Toss together lightly and top with cubed avocado and sesame seeds.<br />
Store the rest of the dressing in an airtight bottle in the fridge. It keeps 4-5 days.<br />
Serve with chopsticks and fresh Pineapple on the side if so desired and Enjoy.<br />

at Christmas time has been a tradition among many for years. This year
you can enjoy a delicious creamy healthy fudge. It is so simple to put together and there is no sitting over the stove to make sure it doesn't burn, as with traditional fudge.<br />
It is rich and goes well with fresh
Almond Milk, so you may want to leave some out on Christmas Eve for
you-know-who.:)<br />
<br />
1 C Agave<br />
1/2 C Raw Honey<br />
3/4 C Coconut Oil<br />
1/2 C Raw cocoa Powder<br />
1 1/2 C Raw Cashews<br />
1/8 tsp Sea Salt (opt.)<br />
<br />
Put everything in the blender and blend until smooth and creamy. Sometimes we like to add in a handful or two of walnuts.<br />
Transfer to a 9x9 container and freeze for at least one hour before cutting.<br />
Store in the freezer as it starts to get gooey and melt if it's left out too long.<br />

I have definitely been in a Holiday "Raw Treats Making" mood! This raw candy reminds me of Christmas morning, when different types of brittle and candy lay in the dish, each tempting you to pick it! Well, you can feel good about picking THIS candy!<br />
Making raw candy-especially chocolate, is so much fun when you switch in and out different ingredients making different flavors. This delicate match of dark chocolate and Goji berries is amazing! The smooth chocolate melts in your mouth as you taste the sweet, sour, and crunchy Goji Berries. A great brittle.<br />
Then, as if it could get any better, you have the option to top it with crushed almonds! It reminds me of a <b>Raw Almond Rocha</b>, though it doesn't have a toffee flavor, it has the crunch of it. Seriously, where has this been? Definitely a new fave, super simple, and a perfect raw treat for the holidays! <br />
<br />
<b>Dark Chocolate Coating</b><br />
3/4 C Coconut Oil, melted (put it in the dehydrator for a few minutes to melt it, it needs to be all the way melted for best results)<br />
1/2 C Organic Cocoa Powder<br />
1/3 C Pure Maple Syrup<br />
<br />
Whisk the raw chocolate sauce together.<br />
<br />
Add<br />
1 C Dried Goji Berries<br />
<br />
Mix well and spread thin onto a cookie sheet lined with wax paper and sprinkle on a few more berries.<br />
Add 1/2 C Chopped Almonds (opt) <br />
Freeze until solid<br />
Break into pieces and store in the freezer. <br />

So with our new thick caramel we have discovered, we made our own "Raw Caramel Delights". Little sweet and salty bits of joy, you are sure to come back. :)<br />

15 Soft Medjool Dates, pitted<br />
1 T Coconut Oil, melted<br />
1 T Almond Flour (almonds blended)<br />
Dash of sea salt and cinnamon (I did two shakes of salt and cinnamon)<br />
<br />
Blend together until the mixture sticks together and has formed a ball. It is thick and sticky.<br />
Transfer to a bowl and freeze mixture for about 10 minutes to form a harder dough.<br />
Take little pieces and form into caramel shapes with your hands, or any shape you want.<br />
Top with an almond in each and lightly sprinkle with sea salt.<br />
Store in the freezer.<br />

Well, after researching a few raw snickers recipes, and trying many, I came up with my own that we all loved. This time of year we love spending time together in the kitchen and making new and healthier "candy" alternatives. Raw candies can be so fun to make and I finally made a chocolate coating that wasn't too thick!<br />
<br />
*Remember to melt coconut oil double-broiler style. I put the amount of oil in a glass bowl and set that in a bowl of hot water until melted, sometimes even covering it. OR set it in the dehydrator if you know you will be using it later.<br />
<br />
You need:<br />
High Speed Blender<br />
9x9 Glass dish, lined with doubled over plastic wrap- you will be lifting the filling out, so you want it sturdy.<br />
Wax Paper<br />
Plate <br />
Fork for dipping <br />
Small Bowls for mixing 1 Batch of Thick Caramel Sauce<br />
1 Batch Dark Chocolate Coating Sauce<br />
1 Batch of "Nougat" filling<br />
1 C Raw Spanish Peanuts<br />
<br />
1. <b> Nougat Center</b><br />
1 C Raw Cashews<br />
1 C Organic Rolled Oats<br />
1 T Coconut Oil, melted<br />
4 Medjool Dates, pitted <br />
2 T Agave<br />
1/8 tsp Sea Salt<br />
Blend on high until the mixture is well combined, you may need to stop it and push down the sides, then blend again.<br />
Transfer the mixture to the 9x9 Glass Dish lined in plastic wrap.<br />
Press it down in the bottom until even.<br />
Set in the freezer and clean out the blender.<br />
<b><br /></b>
<b>2. Thick Caramel </b><br />
15 Soft Medjool Dates, pitted<br />
1 T Coconut Oil, melted<br />
1 T Fresh Almond Butter<br />
Dash of sea salt and cinnamon (I did two shakes of salt and cinnamon)<br />
Blend together until the mixture sticks together and has formed a ball. It is thick and sticky. (I plan to make caramel candies just out of this and also used this to put on caramel apple bites-coming in a later post)<br />
Scoop this out onto the Nougat, spreading it around evenly. It is thick so spread it well.<br />
<br />
Sprinkle 1 C Raw Spanish Peanuts onto the Caramel and gently press them into it.<br />
Freeze until ready to coat. <br />

3. Dark Chocolate Coating<br />
3/4 Coconut Oil, melted <br />
1/2 C Organic Cocoa Powder<br />
1/3 C Pure Maple Syrup<br />

Blend until mixed, or you can whisk it together. I like blending because the cocoa doesn't get everywhere :)<br />
<br />
Pour this into a bowl.<br />
Get out a plate and line it with wax paper. <br />
Take the candy dish out of the freezer and pull up on the sides of the plastic, pulling it out, then take off the plastic and set it onto a cutting board. <br />
Cut evenly into 16 small pieces. <br />
With a fork scoop up one piece at a time and put them in the chocolate bowl.<br />
Spoon chocolate onto the candy.<br />
Lift out, letting any extra chocolate drip off into the bowl.<br />
Set onto your wax paper plate. Continue to do this until all the pieces are dipped. Set them in the freezer until the chocolate solidifies. We left them about 1/2-1 hour. Take out and cut again if desired. We cut them again and stored them in the freezer in a thick plastic container for a quick yummy treat.<br />
Enjoy! <br />

With ripe D'Anjou Pears abundance on the counter, they were calling me to use them. Pears are so great by themselves that I rarely mix them with anything, but my kids and I wanted to make something new! One great thing about having 5 kids is that they are so willing to help make new yummy and healthy foods! Plus, they get to lick out the blender~motivating! :)</div>

This recipe can actually be made top to bottom or bottom to top. Here is what I mean, we made it into a tart, but liked it in pudding form better than more solid pie form, so you can make the Pudding first and top it with the crumbles of the crust, stick a pear slice and orange zest on top and voi-la, a great pudding cup. OR you can do it like this:</div>

1/4 tsp Sea Salt</div>

Blend on low until the nuts and dates are well chopped. You may have to push the sides down a few times in the blender until it is mixed to your liking. I personally like small date pieces.</div>

Press into a tart dish, pushing the sides up all the way around.</div>

2 Oranges, juiced (about 1/2 C fresh juice) *Scrape off some zest and set aside in a bowl before you juice them)</div>

Blend on high until smooth, at least one cycle.</div>

We made this with a tomato base and a bit of chilli power to warm it up.<br />

In the blender:<br />
3 Large vine-ripe Tomatoes<br />
1 1/2 C Water<br />
1 T Sea Salt<br />
1 C Cashews, soaked are best<br />
1/4 C Nutritional Yeast<br />
1 tsp Chilli Powder<br />
1 tsp Braggs Organic Sprinkle-24 Herbs and Spice Seasoning<br />
Twist of fresh ground black pepper<br />
<br />
Blend until smooth. Transfer to a pot and heat on low adding:<br />
1 Tomato, chopped<br />
1 Avocado, cubed<br />
1-2 Big handfuls of torn baby Spinach<br />
<br />
Heat until warm to the touch, the spinach should barely start to wilt, if you boil it you start to loose the living enzymes in the food. <br />
Perfect lunch for a cool fall day!<br />
Serves 4. <br />

It is rich and creamy and one small slice will satisfy your sweet tooth. I used frozen, thawed raspberries for this recipe and the outcome was awesome. I hope you enjoy it too.<br />
<br />
Start by getting out <b>1 C Frozen Raspberries</b> and setting aside in a bowl to start thawing.<br />
<br />
For the crust:<br />
1 C Almonds<br />
1 C Pecans<br />
12 Medjool Dates, pitted<br />
1/4 tsp Sea Salt<br />
Blend or process together until it starts to clump together. You may have to push the mixture down a few times to get it well mixed, but it should resemble a sticky/crumbly mixture.<br />
Transfer to a pie pan.<br />
Press the crust down in the bottom and up around the sides.<br />
<br />
For the filling:<br />
3 C Raw Cashews, soaked 10 minutes<br />
1/2 C Freshly Squeezed Lemon Juice (about 4 small ones)<br />
1/3 C Raw Honey<br />
1/4 C Pure Maple Syrup<br />
3/4 C Coconut Oil<br />
1 tsp Pure Vanilla<br />
<br />
Blend the "filling" ingredients together on high, 1 minute or so until mixture is completely smooth.<br />
Stir in the 1 C Raspberries.<br />
Pour the filling into the pie crust.<br />
Freeze until ready to eat, at least 1 hour.<br />
*You can also drizzle with Raspberry Sauce if so desired.<br />
(1 C Frozen, thawed Raspberries1/4 C Agave. Blend.) <br />

We are! My kids and I had a blast making three different flavors of raw ice-cream, sauces, and toppings for these. We also had 3 out of 5 kids request it for their next birthday, so I am taking that as a "Love it!"<br />
<br />
You need:<br />
Yo-nanas maker (It may also work in a food processor)<br />
6 Fresh Ripe Bananas (or one for each person) <br />
<br />
For the Ice-Cream: <br />
3 Frozen bananas<br />
2-3 C Frozen Strawberries<br />
2-3 C Frozen Raspberries<br />
<br />
Thaw these in separate bowls for about 10 minutes, then press through the Yo-nanas maker one flavor at a time to get fresh fruit raw ice-cream! Store in an airtight containers in the freezer until ready to serve.<br />
<br />
Orange Kreme Sauce:<br />
1 C Cashews, soaked about 10 minutes (I soak them in warm water for a quick soak)<br />
1 Orange, juiced (about 1/3 C juice)<br />
1/3 C Water<br />
1/3 C Agave<br />
1/2 tsp Pure Vanilla, alcohol free<br />
Put all ingredients in the blender. Blend on "sauces" or "high" until it is smooth and there are no cashew pieces. Store in an airtight container in the fridge.<br />
<br />
Chocolate Sauce:<br />
1/4 C Agave<br />
1/4 C Pure Maple Syrup<br />
1/4 C Organic Cocoa Powder <br />
2 T Coconut Oil<br />
dash of Sea Salt<br />
Blend together until creamy. Store in an airtight container in the fridge.<br />
<br />
Raspberry Sauce<br />
1 C Frozen, thawed Raspberries<br />
1/4 C Agave<br />
Blend. You can choose to leave small raspberry pieces or blend until there are just the little seeds.<br />
Store in an airtight container in the fridge.<br />
<br />
1. Take a banana a slice it length-wise all the way down the middle.<br />
2. Top with a scoop of strawberry, a scoop of banana, and a scoop of raspberry ice-cream.<br />
3. Drizzle with your choice of sauce.<br />
4. Top with fresh raspberries, chopped almonds, shredded coconut, dried gogi berries, or other nuts.<br />
5. Repeat for each person.<br />
It was a GREAT activity to do with the family because we all love choices! Some chose one sauce, while others chose to pour it ALL on! I hope you find this as enjoyable as we did. <br />
*They even made one for Dad and stored it in the freezer completely "done" for a couple of hours and it was still delicious when he came home to it.:)<br />

thinking of cheese it's? Think no further! Now imagine it healthy and
even better... Okay, now you are thinking of these wonderful kale chips.
I have experimented with all kinds of flavors in kale chips, but today
we hit the gold..or should I say Cheese mine! I was looking at the
ingredients on a package of kale chips and wondering how they get the
cheesy part to stick on it. Then it occurred to me to make a sauce,
almost like a dressing, okay it can be used as one... then mix it into
the kale and dehydrate. I tried it. Came up with what I thought was a
"pretty good" sauce. However, through the afternoon the house started to
smell warm, cheesy, and slightly spicy, which was a great aroma for a
rainy day. About 6 hours later I tried one and...delicious! My daughter
assured me they reminded her of cheese-it's...even though it's been like
5 years since she's had one... but everyone in the family loved them!
With every bite we were amazed over and over how good they were. I also like this version because sunflower seeds are much cheaper to use. <br />
<br />
You need:<br />
<br />
Fresh Kale.<br />
run your fingers along the
spine to get the most leaves off and wash and dry. I used about 6-8
stalks worth for a BIG batch. Transfer to a big bowl.<br />
<br />
For the Cheezy Sauce<br />
<br />
1 C raw soaked and sprouted Sunflower Seeds<br />
3/4 C Water<br />
1 T Apple Cider Vinegar<br />
1/2 tsp Sea Salt <br />
1/4-1/2 Red Bell Pepper<br />
3 T Nutritional Yeast<br />
1 T Olive Oil<br />
1 tsp Chili Powder<br />
1-2 dashes of Cayenne Pepper, more if you like it hot!<br />
<br />
Blend sauce in the blender until smooth, about a minute. Pour over the kale and mix it in with your hands to evenly coat the leaves.<br />
<br />
Transfer to a dehydrator and dehydrate for 6-8 hours or until crispy. Check on them once in a while to lift any that are sticking to the dehydrator and flip them.<br />
<br />
Go make a batch, pick out a good movie, and enjoy with the
fam!<br />
