Zucchini Pasta and Pesto
1-2 Zucchini Spiralized (or shredded or peeled with peeler)
1/2 C Pine Nuts
1 C Walnuts
(Soak nuts over night for best results)
2 T Olive Oil
1-2 Cloves of Garlic
1 tsp Sea Salt
1/4 C Water or more or less
Dash of Pepper
1-2 tsp.dried Basil
1-2 Roma Tomatoes, seeded and chopped.
Blend all Pesto ingredients except pepper,basil, and tomatoes in a blender adding water until creamy. Add Pepper, Basil, and Chopped Tomatoes.
Mix as much sauce with "Pasta" as you wish.
Makes about 5-6 Servings.
