Night-shade free Guacamole and Cauliflower "Rice" Taco Salad

I am convinced that avocados are one of the most perfect fruits when ripe!
I have loved a good guacamole for years, but I almost always added chunks of tomato and red bell peppers. This new version is great and I even added more dark leafy greens in it for texture and benefits. I hope you enjoy it as much as I did!
*Remember this is Family Size!

3 Avocadoes
1Tbsp of Lime
1/4 C Kale
1/4 Red Onion, minced
1 Small Garlic
1/8 tsp Cumin
1/4 tsp Sea Salt

Add all to the food processor or just mash together with a fork or avocado masher.  It's great on a salad or to dip cucumbers in!

While I made organic brown rice and black beans for my family to put on our taco salad, I tried making "cauliflower rice" for the first time, which is just cauliflower in the food processor until it resembles a small rice. It was not bad and mixed in the salad I actually really liked it.

Raw Broccoli Cabbage Salad

 I know when I am in an ALL raw foods stage because I think of idea after idea of different foods and combinations of foods, not to mention how amazing I feel! Energy, motivation, happiness, confidence...ok I won't bore you.
 Well, in the past 24 hours inspiration hit more than once, so you are in luck and get to try my new creations. I love when this happens because something yummy always comes out of it.
 This salad tasted cheesy to me so I was going to call it a Raw Cheesy Broccoli Cabbage Salad, but it was too long, plus my husband said to him it was almost a peanut sauce taste. So you can try it yourself and see what you think, for me I'll go with cheesy:)
 It was tasty and SO simple  to put together and great as a side salad for 4 or double or triple to make it the main dish, I know I will next time!

1 C Purple Cabbage, chopped
1 C Green Cabbage (for variety), chopped
1 C Broccoli, finely chopped
Put in a bowl and add:
1 T Extra Virgin Olive Oil
1 T Nutritional Yeast (this gives it the flavor you want!)
1/4 tsp Sea Salt
1/8 C Crushed Walnuts
Toss together and Enjoy your super fast and healthy dinner!

Cabbage and Kale Salad

Cabbage and Kale are a great combination in this light and tasty salad. I made it as an after thought for dinner and the whole big bowl was scraped clean. I just love when that happens! The lettuces take on a mild flavor that keeps you coming back for more of that tasty crunch.

For the Salad:
1/2 Head of Purple Cabbage, chopped
4 C lightly packed chopped Kale, massage the kale a little and it shrinks down some to about 2 packed C.
1 Gala Apple, chopped into small pieces
1/2 C Dried Cherries (dried cranberries would work too)
1/2 Chopped pecans
Mix together with your hands, then add

Apple Cider Vinegar Dressing
In a small bowl add:
1/4 C Olive Oil

1/2 tsp Sea Salt
3 T Apple Cider Vinegar
Mix well and pour over salad. Toss together with your hands until all is lightly coated.
Serve well.

Raw Curried Cauliflower

I have been experimenting with raw cauliflower for a while and found it delicious because of it's natural sweetness, yet it will take on flavor well like zucchini. This is a simple yet great Indian tasting dish. We serve it as a main dish.

2 Heads of Cauliflower, broken into baby pieces then soak it in very warm water about 5 minutes to wash it off and soften it up a bit. Plus, cauliflower tastes better in this dish a little warm.

Drain the cauliflower and transfer to a mixing bowl and add:

1/8 C Olive oil, drizzled over cauliflower
1/4 tsp Garlic Powder (or 1/2 of a garlic clove)
1/8 tsp Ginger
1/2 tsp Sea Salt (use less if needed)
3 tsp of Indian Curry. You can use less if you don't want it too spicy, but this seemed to be just the right amount of spice.

Sprinkle the spices and salt over the cauliflower and mix it together until the spices are evenly distributed.
Eat immediately. Unless you want it cold, then it stores 1-2 days in the refrigerator.
Makes about 6 Cups.

Raw Broccoli and Sunflower Seed Cheeze Sauce

I wanted something raw and warm and creamy and had a huge bag of broccoli...so this is what I came up with today. Surprisingly warm and yummy.

1-3 C Broccoli florets, broken into small pieces

Sunflower Seed Cheeze
1 C Sunflower seeds (best if soaked a couple hours, but works without soaking)
1 C Warm Water
1/4 C Nutritional Yeast (not technically raw, but I use it and it adds a great cheesy flavor)
1/4 tsp Cayenne Pepper
1 tsp Sea Salt
Blend cheeze ingredients until warm and creamy.About a minute. The longer you blend, the warmer it will get, just don't let it get too hot.
Pour over broccoli and mix together for a warm and creamy broccoli dish. Sprinkle with a little more Cayenne.

Raw Broccoli Salad

If you like Broccoli Salad, this one's for you.

 Broccoli Mixture
5 C Shredded Broccoli
1/2-1 Red Onion
1 C Sunflower Seeds
1/2 C Raisins

Dressing:
1 C Cashews, soaked
3 T Agave
2 T Apple Cider Vinegar
1/4 tsp Sea Salt
1/4 C Water
Blend dressing well and mix with Broccoli mixture. Serve.

Fruit Kabobs

This was a fun variation from having a plain fruit salad. The kids loved eating off of a stick..and yes the boys wanted to sword fight with the sticks afterwards, but it was a fun change.

For this one I used: Pineapple, Granny Smith Apples, Gala Apples, Orange Slices, and Bananas.

Strawberry-Apples n' Cream

This is a little twist and extra sweetness to the Apples n' Cream. I just added Strawberries in! I think next time I'd even add a few chopped nuts, like almonds, or a nuts and dates mixture.

Valentines Fruit

1 Pineapple
1 lb. Strawberries

1 Heart shaped cookie cutter

Cut off the outside of the pineapple. Then cut off slices from the sides. Lay slices flat and cut out heart shapes.
Design how you like. I used a glass pie dish so I could see all the layers.


Quick Lettuce Wrap

Piece of lettuce or 2
Spinach
Quick guacamole or avocado
Raw corn or thawed from freezer (not in this one)
Salsa and or tomatoes
Spoon all into lettuce and munch!

I top with light tortilla chips or flax crackers.
In this one I actually dipped some pieces of flax cracker into the "Cashew Cream Cheese" for some extra flavors. YUM!

1 Cucumber sliced up
1 Drop of "Cashew Veggie Dip"
Almonds to top them with.
