Raw Nut Tacos

Taco Shell

Romaine Leaves

Nut stuff "meat"
2 Vine Tomatoes
1 1/2 C Almonds
1/2 C Walnuts
2 Cloves of Garlic
1/2 tsp Cumin
1/2 tsp Chili Powder
1 Tbsp Cilantro
1 tsp Sea Salt
3-4 Sun-dried Tomatoes
Dash of Cayenne Pepper
1 T Lime Juice

Chopped Tomatoes or salsa

Mix Nut stuff in a blender, Tomatoes first, so all other ingredients process.
Line a Romaine "Shell" with Nut Stuff, Guacamole, and Chopped Tomatoes or Salsa.

Raw Sour Cream

Raw Sour Cream

1 C Macadamia Nuts
1 Lemon, juiced (abt. 1/3-1/2 C lemon juice)
1 Clove of Garlic, pressed (opt)
1 tsp Sea Salt
1/4 C water, or more.
Blend all in blender, adding a little water at a time until completely smooth and almost fluffy.

Serve anywhere you use sour cream.On raw chilli or with Raw Tacos are great!

*A Vegan alternative is to dip cubed, boiled potatoes in the sour cream followed with Parmesan Nut Cheese.

Raw Zucchini Pasta and Pesto

 Zucchini Pasta and Pesto

1-2 Zucchini Spiralized (or shredded or peeled with peeler)

1/2 C Pine Nuts
1 C Walnuts
(Soak nuts over night for best results)
2 T Olive Oil
1-2 Cloves of Garlic
1 tsp Sea Salt
1/4 C Water or more or less
Dash of Pepper
1-2 tsp.dried Basil
1-2 Roma Tomatoes, seeded and chopped.

Blend all Pesto ingredients except pepper,basil, and tomatoes in a blender adding water until creamy. Add Pepper, Basil, and Chopped Tomatoes.
Mix as much sauce with "Pasta" as you wish.

Makes about 5-6 Servings.
