Valentines Fruit

1 Pineapple
1 lb. Strawberries

1 Heart shaped cookie cutter

Cut off the outside of the pineapple. Then cut off slices from the sides. Lay slices flat and cut out heart shapes.
Design how you like. I used a glass pie dish so I could see all the layers.


Strawberry Spinach Salad

This salad is a definite summer-time favorite. You just add as many strawberries and other toppings as you like.

1/4 C Raw Almonds
1/8 C Cranberries (dried)

Top with Lemon-Agave dressing.













It also made a pretty Valentines Salad.

Raw Almond Butter Cups

I like to have these in the freezer for a quick "sweet fix" So yummy.

1 C Almond Butter
1 ½ C agave, Divided
2 C coconut oil, divided
½ Tbsp sea salt
1 C cacao nibs

Mix almond butter, ½ C agave, ½ C coconut oil, and salt in a medium bowl. Keep in a warm place until ready to use. 
Blend cacao nibs, remaining 1 C agave and remaining 1 ½ C coconut oil in blender until smooth. 
Spread half of cacao mix into a thin layer on parchment paper on a cookie sheet. 
Place in freezer for 15 minutes until firm. Spread almond butter mix over hardened cacao layer. Then spread remainder of cacao mixture over almond butter. Place in freezer until firm.
Turn out pan onto cutting board, peel off parchment paper and cut into small pieces. Store in container in the fridge or freezer.
Eat plain or as good topping for ice cream.


Raw Pizza

So after almost 2 years of trying many raw foods, I finally found what I thought to be a fairly simple and yummy Raw Pizza recipe. I got the "inspiration" for it, from a Raw Inspiration book, and of course tweaked it to my liking :) It just takes a little preparation time and is well worth it!

Raw Pizza Crust
1 C Golden Flax Seeds (soaked 1/2 hour-1 hour)
1 C Water
2 C Almonds, Soaked (overnight or I've used right away)
2 T Chopped Onion
2 tsp Thyme
2 tsp Rosemary
2 tsp Oregano
2 tsp Italian Seasoning
1-2 T honey or agave (opt. I like it a little sweet:)

Grind the flax seeds in a blender or grinder. Then soak the ground flax seeds in 1-2 C water until it is absorbed. Stir occasionally.

Blend the Almonds. If they are dried out a bit they will blend finer.
Add the flax seed to the almonds and add onion and other spices. Blend, process, or stir together until well mixed.
Form the dough into pizza crusts and dehydrate overnight. Longer for a harder crust.
This made about 10 5-6 inch. Pizza Crusts and kept them in a container in the fridge. They lasted 2 weeks.


Pizza Sauce
2 C Tomatoes
1/2 C Sun dried Tomatoes
1/4 C Italian Seasoning
1-2 Garlic Cloves

Blend all until smooth. Put in an airtight container until ready to use.

Pizza Cheese
1 1/2 C Macadamia nuts
2 T Lemon Juice
1/8 C Nutritional Yeast
1 tsp Sea Salt
Dash of Cayenne Pepper (makes it a little spicy when dehydrated)
Enough water to blend smoothly.
Blend all until creamy. Store in container until ready to use.
I like it because it looks like Mozzarella cheese, and turns a little yellow after dehydrated.

Take a crust and spread Pizza Sauce, and then Cheese Sauce. I topped mine with chopped tomatoes, red bell peppers, and broccoli. You can put whatever toppings you like. (avocado, sun-dried tomatoes, raw olives, and thinly sliced zucchini are also great.)
Finally, eat plain. Or dehydrate it for a couple of hours.
Take out and enjoy!

Simple Green Smoothie

2 Oranges, peeled
1-2 Bananas
1-2 C Greens (Spinach, Kale, etc.)
1/2 C Ice
Blend all in a blender until smooth. I like to drink this one with a big straw and just drink it down. The 2 oranges give it a very mild/sweet flavor.

1 C Water
1 Banana
1 C + Spinach or other greens like Kale etc.
Ice

Put all in the blender and blend until smooth.

You can add any fruits to this that you want.

Kale Chips

A Bunch of Kale.
3 T Extra Virgin Olive Oil
Sea Salt

Take as much Kale as you want. I like to use 3-4 leaves and remove from spines. Wash and massage to soften. Then toss in Olive Oil and Sea Salt. Lay out onto dehydrating trays and dehydrate overnight.

It had a much lighter taste than I expected and almost no kale taste to it. Almost a popcorn texture. We just keep them on the counter to snack on whenever.
