Veggie Sandwich on Tomato-Carrot Bread

Here is a sandwich idea with Tomato, Cucumber, Spinach, and Avocado..and a dash of sea salt and pepper. All on the Tomato-Carrot Bread.

Raw Apple-Banana Pancakes

2 C ground flaxseeds
1 Banana
1 Gala Apple
1 C Brazil Nut Milk or Almond Milk
1/2 C Agave
1/2 tsp. Sea Salt
1/2 tsp. Vanilla
1/2 T Cinnamon

Walnuts (opt.)

Grind flax seeds into meal.Put in a mixing bowl.
Blend the rest in the blender.
Add walnuts or other fruit now.

Pour batter by the 1/4 C onto teflex sheets. Spread into 4-5 inch circles, 1/8 in. thick.
Dehydrate 3-4 hours. Flip and continue for another 2 hours.
Serve or fill with Strawberry jelly and pure Maple Syrup.
Makes 16.

Raw Banana Flax Bread

This is a great snack or sweet bread.

2 1/2 C ground flaxseed
1/4 C Agave
1 C Water
1 1/2 Bananas
1/2 tsp Sea Salt
1/2 tsp Vanilla
1-2 T Cinnamon

Grind flax seeds into meal. Put aside in a bowl.
Blend the rest of the ingredients and stir the mixture well with the flax meal.

Empty bowl onto a cutting board. Form a loaf with your hands. Slice into thick pieces and lay pieces on dehydrating sheet. Dehydrate 2-3 hours or until desired firmness is achieved.

Mango Pudding

When you blend Mangoes they become thick and gelatinous. This would also make a great pie filling.

4 Ripe Mangoes, peeled and cored

Blend all in the blender until thick,smooth, and creamy. Enjoy.

Option 2: Add a little Agave to sweeten it even more.
Makes 5 small cups.

Raw Tomato Carrot Bread

A couple years ago I thought I could make a raw bread by putting a whole loaf-shaped raw dough in the dehydrator..little did I know then that the inside would always stay gooey. This year a friend showed me how she formed a loaf, sliced the pieces, and dehydrated the slices. What a new world is open to me now!

This bread is great for sandwiches or if you are just craving a bread texture. There is not too much flavor, but if you are creative you can add whatever spices and herbs you like.
Here is the plain recipe.

2 C ground flax seeds, I like golden
1 C carrots
1 Tomato
1 tsp. Sea Salt
1 clove of garlic, pressed
3/4-1 C Water

Blend flax seeds into meal. Pour into a bowl
Blend Carrots, Tomato, salt, garlic, and water.
Mix with flax seed meal until thoroughly mixed. It should be thick.

Lay dough onto cutting board and form into a loaf with your hands.

Cut into 1/8 inch. Slice and lay separately onto a dehydrating sheet.
Dehydrate 2-3 hours. Check and see if you want it harder. Put slices back together in loaf form and store in an airtight container.
I think I'd like to try it with a little coconut oil, garlic, and salt on top for a garlic bread.

Raw Apple Dessert

I got the original idea for this recipe from a good friend Lara Johnson. I added a few things for my taste. It has a great mix of sweet,sour, and cinnamon!
This recipe is large enough for a big pie, or use a 9x13 glass dish and cut into square pieces. My husband says it's like Raw Apple Crisp without the cream on top. However, you could top it with Raw Whipped Cream!

Crust:
1 1/2 - 2 C. Pecans
7 Medjool Dates, pitted
1/4 tsp. Sea Salt
1 t. Cinnamon
1 t. Vanilla

Food process and press into a dish

Filling:
4  Granny Smith Apples, thinly sliced in a food processor OR use an apple peeler/slicer
2 Gala Apples, diced and added to blender
1 C Raisins, soaked for 30 minutes, then added to blender
Juice of 1 lemon (a little less than 1/4 C org. lemon juice)
1/8 tsp. Sea Salt
1 t. Vanilla
1 T. Cinnamon
1-2 T. Raw Agave

Blend the Gala Apples, Raisins, Salt, Vanilla, and Cinnamon. In a bowl, combine apples, blended mixture, lemon juice, and drizzle with Agave and mix well. Add to crust.

Crumble Topping:
2 C. Walnuts
7 Large Medjool Dates, pitted
1 t. Vanilla
Pinch of Sea Salt

Food Process until crumbly and top the pie.

Serve with 

Raw Whipped Cream:

1 C Raw Cashews, soaked at least 30 minutes
1/2 C Water
Juice of 1 orange
1 tsp. pure vanilla
1/3 c. Raw Agave
Combine and Blend until creamy. Drizzle over the top of each slice or piece. Enjoy!
This one is a half batch in an 8x8 dish


If you used the Apple slicer then take my kids' idea and have "apple noodles" with whipped cream sauce.

Fruit and Salad Dinner

At least once a week I like to make a dinner with a big fruit salad, spinach, and a variety of nuts and seeds. Then everyone chooses what they want. Usually we make it a big spinach/fruit salad topped with nuts and seeds and the Lemon-Agave Dressing.

Fruit Salad- Just pick a variety  of fruits or use what you have on hand.
Apples
Oranges
Grapes
Kiwi
Banana
Strawberries
Grapes

Another dinner option is to have all the fruits in different bowls so it's like a big fruit salad bar.
(kids like options :)

Raw Corn Chips

These make great chips or wraps depending on how long you dehydrate them.

4 C Corn (I like to use a small bag of thawed frozen corn.)
1/3 C Ground Golden Flax Seeds
1/4 C Sunflower Seeds
1/4 C Juice of an Orange
1/4 C Lime Juice
1/2 tsp. Minced Garlic
1/2 tsp. Sea Salt

Blend until smooth. Pour onto dehydrating teflex sheet and sprinkle with sea salt.Dehydrate 3-4 hours, then flip onto dehydrating sheet. Cut into triangles for chips, squares for a sandwich bread, or wraps. Continue dehydrating until soft for wraps or crunchy for chips. I usually just leave mine in overnight for chips.

Here I had it as a snack with cucumbers, tomatoes, and guacamole.











Here it is as a sandwich with the same ingredients, adding lettuce.

Raw Dehydrated Fudge Brownies

These are a brownie I originally found in a book Every day Raw, but changed a bit.
These are pretty rich, but great with the fudge sauce or chocolate pudding and a strawberry on top. I like them because you can have warm brownies, right out of the dehydrator! :) Also good with raw ice cream.

2 1/2 C Cashews
1 1/2 C Cocoa Powder
1/2 tsp. Sea Salt
1/2 C Pure Maple Syrup, grade B
1/4 C Agave (could even add a little more)
3/4 C Water
1/2 tsp Vanilla
Dash of Cinnamon

Blend Cashews into flour then add the rest of the ingredients until smooth. Pour out onto teflex sheet in dehydrator and spread to the edges.
Dehydrate overnight and flip it over onto dehydrating screen. Continue dehydrating until it is firm but not crispy, a 4-6 hours. Cut up and enjoy.
It makes about a 12x12 sheet of brownies.
