There are so many variations of vegetables you can put in a piece of Lettuce or Romaine with different spices. Here's one that came out tonight with things on hand.
Head of Lettuce,
1 C corn, frozen-thawed or from the cob
Pull the bottom of the lettuce head off so that the rest stays in tact and makes nice rounded shells.
Chop all veggies and mix in a bowl.with your favorite spices, for this one I added
1 T Olive Oil
1/2 tsp.sea salt
1/8 tsp. black pepper
1 T Lime
a couple dashes of Cayenne Pepper to give it a kick. Mix it all together.Yum.
Put spoonfuls into the lettuce shells and roll up. I used toothpicks to keep them together. If you have bigger shells, you can tuck the ends in for a cleaner dish. However, have napkins nearby when you devour these :)
