Spicy Thai Salad and Spicy Dressing
This is definitely a family favorite and we have this dressing on hand at all times and even travel with extra quarts of it. This is SO yummy and spicy. My 5 year old likes to try the dressing to test for the sweet, salty, sour, bitter and yum factors! :) It passes the test every time! It really has it all.

Thai Salad
1-2 C Spinach or Romaine
1 C thinly Sliced cabbage
1/2-1 Sliced Red Bell Pepper
1 Sliced Roma Tomato
1/4 Sliced Cucumber
1 Zucchini  thinly sliced
1 Avocado Sliced
Top with Raw Cashews


Spicy Thai Dressing
1 C Extra Virgin Olive Oil
1/3 C Nama Shoyu
1 Lime, Juiced

3 T Org. Grade B Maple Syrup
1 tsp. Red Pepper Flakes
1/4 C Cashews, best if soaked first
Blend until smooth and there are no cashew chunks. I usually press the "dressings" button 2 or 3 cycles to make sure.















Fudge Balls-Quick

There are a lot of versions of these out there, but I just made up my own.
1-2 C of mixed Pecans and Walnuts
1/2 C+Agave
1-2 T Cocoa Powder
Mixed to a dough in the food processor and rolled into balls and set in the refrigerator.

I tried a new combination yesterday and this is what it was.

Spinach
Strawberries-chopped
Avocado-chopped
Walnut pieces dipped in Agave (gives that sugared nut taste)

Topped with Lemon/Agave Dressing

1+ Cup of Spinach
2 Apples (chopped)
1 Lemon (juiced)
1-3 C Cold water
Mix in the blender
Mine got pretty thick from the apple, so I added more water and kept stirring it as I drank it. The lemon really drowns out any spinach flavor.

Blueberry Shake

Simple Blueberry Shake

1 Cup blueberries
1-2 Frozen bananas
1+ C Almond Milk]
Swirl or 2 of Agave
Ice (opt.)
(could add vanilla but I was out)
Mix in the blender and Enjoy.

Raw Wrap with Onion and Dipping Sauce

Raw Wrap Recipe
Red Romaine lettuce, washed and patted dry
1 ripe tomato, thinly sliced
1 ripe avocado, thinly sliced
1/2 small white onion, thinly sliced
Cilantro for garnishing
Sesame seeds for garnishing (optional)
Dipping Sauce
1/4 cup of nama shoyu or light soya sauce
Juice from half a lemon
3cm piece of ginger, finely grated (optional)
Method:
  1. Cut the lettuce into little circular shapes that can fit in your hand.
  2. Assemble wrap by placing a slice of tomato on the lettuce, followed by avocado, onion, cilantro and then sesame seeds.
  3. Mix together the dipping sauce and then serve.

Avocado Corn Salad

Avocado  Corn Salad
This is a family favorite. Great for big groups. As a side salad or for dinner alone.

4 Large ears of raw corn or 4Cups of thawed frozen corn-I just soak it in warm water to thaw it faster.
2-3 Large ripe tomatoes or 1 C grape or cherry tomatoes
1-2 Avocados, cubed
1/2 C fresh cilantro, chopped
1 small red onion
1 red bell pepper
1-2 zucchini, chopped 
1 can drained black beans (opt. not raw) or 1 C sprouted chick peas.
Dressing:
2-3 T Olive Oil
1 Fresh lime (abt 1/4 C)
1/2 tsp. Sea Salt
1/4 tsp. Ground pepper
1 clove garlic, diced
Mix  dressing and pour over salad and stir. Serve in a lettuce wrap or alone.












*This is also a great appetizer with chips or rolled in corn tortillas. (vegan)

Piece of lettuce or 2
Spinach
Quick guacamole or avocado
Raw corn or thawed from freezer (not in this one)
Salsa and or tomatoes
Spoon all into lettuce and munch!

I top with light tortilla chips or flax crackers.
In this one I actually dipped some pieces of flax cracker into the "Cashew Cream Cheese" for some extra flavors. YUM!

My Salsa

My Salsa
= abt 4-5 Jars
24 Roma Tomatoes
1 Onion
1 Jalapeno Pepper, with a few seeds
2 Garlic Cloves
1-2 T Sea Salt
1 Red, 1 Yellow, 1 Orange Bell Peppers
1 Juice of a lime (or 1/4 C lime juice)
1/2 C Chopped Cilantro
1 T Season Salt
This is just the salsa I ended up putting together every time I go to make it. I use my chopper and food processor to do most of the cutting for me. :)

Zesty Juice

Zesty Juice
1 Grapefruit Juiced = about 6-7oz.
1 Orange juiced =abt. 4oz.
1 Lemon juiced = 2oz.
1 Lime juiced = 1 oz.
=about 13-14oz. straight juice.(Very sour)
Dilute with 12-14oz. water or to your likening.
I usually put mine in a 30oz. mug.
